I used my UDS this past weekend for the first time to smoke some ribs and the bottom of the 2 racks that were on the lower grate got burnt The temp in the drum never got over 230 and there is plenty of space between the charcoal basket and the lower grate I think I need to add a diffuser below

As far as dry results with a UDS, if you leave the cooker closed till the ribs are almost done (you can hear them sizzling away, when sizzling starts to die down, the rendering process is almost complete), then open to check for "done" with bend or toothpick test, you'll have excellent results every time
