KCBS requires the money muscle in a pork butt be cooked attached to the rest of the butt On a direct offset, do you cook a "trimmed out" (i e , cut away from the butt but still attached) money muscle away from the heat to protect it? Or toward the heat to focus cooking on that muscle? Fat down

The KCBS Rep has the final word on any question or issue with the meat inspection You may either inspect each teams competition meats as they arrive and are being checked in or you may go to their cook site to do your inspections

Yet when I think of KCBS, all that really comes to mind is competition, and it makes me think that their mission is missing two words at the end of it - "in competitions " In fact, much to credit of Phil and everyone else here, I think the BBQ Brethren does more to fulfill the KCBS mission than KCBS does Or am I clueless and missing something?
