My secret to collared-shirt-plus-sweater is to wear a super short-sleeved collared shirts (or sleeveless) This stops all the sleeve tangling nonsense with flat cotton shirt + knit sweater I'll generally wear another long sleeved tshirt under the collared shirt to stay warm and keep the knit sweater sleeves in place
