It's not an option They don't mean the same thing It's a choice about what you are trying to communicate If you are expressing an ongoing interest, "have been" is really the only choice If you want to be vague about when your interest started you can say "I am fascinated by " We would assume you meant "currently"

I agree with sound shift "fascination of" seems to imply that you are talking about the snakes being fascinating, rather than him being fascinated with them (if that makes any sense!) "fascination for" sounds OK but I think "with" is by far the best option
