Sounds like I'm in the minority here, but I much prefer them to the sous vide chicken thighs The chicken has a fake tasting charred flavor to it I haven't found the turkey to be too salty Some of the ways I've used it is adding protein to a salad, mixed in with beans and rice and in a quesadilla As with all things, follow your taste

If you want to have your turkey breast be awesome, cook it sous vide at 140 degrees F for at least a few hours (longer time for thicker meat) Toss some butter, seasoning, maybe some mayo, and or frozen stock cubes in the bag too

Canadian here, and our thanksgiving was about a month ago I did the serious eats turkey breast SV recipe with crispy skin, and then just roasted the wings, legs and thighs in the oven at low temp with some onions, apples and herbs After doing some reading, there wasn't much advantage to SV for dark meat, so different coming methods made sense
